Through years of supporting businesses specializing in noodle, we came to realization that there are several aspects of noodle making that have been misunderstood or not known well by a number of people, even some of who are regarded as professionals for years. This section is intended to illustrate a portion of what we've learned over the years of research and probe into science of noodle making. The professor we have on this section is Mr. Kawakami who has been committed to perfecting noodle making for years through uses of science and technology and a number of researches that still continue as of today. Having probed into traditional noodle making methods, he has discovered mechanics of what makes noodles delicious.
